Snickerdoodles ~my MIL's recipe~ 2 3/4 c. flour 2 tsp. cream of tartar 1 tsp. baking soda 1/2 tsp. salt 1 c. shortening, softened 1 1/2 c. sugar 2 eggs 4 Tbl. sugar 4 tsp. cinnamon 1. Sift together the dry ingredients (flour thru salt). 2. Cream the shortening, then gradually beat in 1 1/2 c. sugar and eggs. 3. Add the dry ingredients to the wet. 4. Chill the dough (for at least 2 hours). 5. Preheat the oven to 400°. 6. Combine the 4 Tbl. sugar and cinnamon in a small dish. 7. Form balls the size of small walnuts, roll in the cinnamon-sugar mixture and place 2" apart on a cookie sheet. 8. Bake at 400° for 8-10 minutes (until light brown tops, but still soft). Cool on wire racks. (They'll flatten as they cool.)
